Today I’m not only sharing my day of eats from Sunday for WIAW, but also running a giveaway for a whole foods gift card! Entries valid through Sunday, January 10th. Make sure to head to the bottom for the details 😎
Breakfast was the smoothie below x2 (32 oz.). I was feeling kind of jet lagged from our travel day on Saturday and needed some hydrating nutrients. Not pictured: Herbal tea and coffee.
We came home from our trip to an empty fridge, so Lunch followed a very hangry shopping session.
I literally couldn’t wait to put the groceries away before I got my hands on some delicious rotisserie chicken dipped in sriracha aioli. I also had applesauce with cinnamon, plantain chips and pickled beets, dulse & kale (<– this stuff is seriously amazing. A must try if you like kimchee or pickled things).
After lunch we headed to Costco where we managed to spend a small fortune on toilet paper, cleaning supplies and giant plastic tubs of laundry detergent. Isn’t it fun being a grown up? (Mom, I miss you!)
During our shop, I ate a That’s It Bar and some pumpkin seeds that I forgot to photograph.
When we got home, I started prepping an early dinner of shrimp and green bean stir fry from my new Autoimmune Paleo Cookbook!
For those of you with the cookbook, know that I tweaked the recipe a bit. I took the garlic cloves out before I served it, so the food tasted like garlic but I didn’t eat any actual pieces. Garlic is just too much for this posh body as I literally wake up with hot flashes if I eat too much (26 going on 60!).
I also used spinach instead of mushrooms because the mushies at the grocery store looked old. Finally, I pan fried my shrimp separately instead of cooking with green beans and topped my plate with Thai basil and chopped scallions instead of parsley.
This was SO good! The combination of flavors –caramelized onion, ginger, garlic, coconut aminos, ghee, and honey– perfectly complimented the shrimp & green beans. The fresh herbs on top elevated it even more. I will definitely be making this again. Josh gave it a thumbs up, too. Housewifin’ for the win.
